I don’t know if I’ve shared this yet, but my little family and I are going to be in our best friends’ wedding in less than two months. What that means for me is that I’m going to need to wiggle into a bridesmaid’s dress and I need to start the watch-my-weight boot camp ASAP. I made the decision to attempt to eat healthier, so salads were the first thing that came to mind. Here’s the final product: my Sweet Summer Grilled Chicken Salad.
I started my quest to create a refreshing summer salad by heading to Smart & Final to get my shop on. You can read more about my shopping trip here.
After finding the First Street Boneless Skinless Chicken Breast I was looking for, I also gathered up various other ingredients for the perfect salad: sliced almonds, sunflower seeds, dried cranberries, apples, and First Street Mild Cheddar Chunk Cheese.
Chop the lettuce as you wish. We prefer Romaine cut into thin strips, but you can choose what suit your fancy.
Slice the block of cheddar in half and shred it. I liked to think as I was doing this that I was getting an arm workout along with my healthy meal.
I used an apple/slicer/corer to cut the apples and then cut each slice into smaller chunks.
I’m not the best with a grill. Actually, I’ve never really tried to grill, but I’m pretty sure my husband has the market cornered on grilling in our home. While I was preparing the rest of the ingredients, he handled the grilling of the chicken.
He does a pretty good job, don’t you think? When the chicken is done being cooked, cut thin slices and lay it on top of the prepared salad.
Voila! A quick, easy, yummy salad that has health and taste all combined in one yummy plate. Enjoy!

This looks SO good! Your post reminded me that we haven’t had a salad like this (with the chicken, etc) at all this summer, so I’m putting it on my August meal plan.
Oh yummy. I need to go on a weight boot camp too! Hah. Love the addition of the cheddar cheese with this. It is a nice change from using feta, which I find can be a little too tangy sometimes. Great recipe.
