Well ladies (and maybe some gentlemen), it’s been just over a week into the Monthly Menu Plan and I thought it might be nice to give you a quick update on how things are going so far. I know that at least for myself, I can start out super strong and gung-ho for a new idea, but that I can have my motivation sizzle out fairly quickly.
So far I can say that there is no fizzling happening so far! The Husband is loving coming home to a new home-cooked meal each night and I am So. Less. Stressed. I’m not staring into the abyss that’s my pantry; in fact, my pantry is full with every ingredient I need to make meals for the rest of the month. I was able to create a comprehensive shopping list once that included everything that I’d need. Again, no stress!
We’ve attempted some new recipes this past week that I found through Pinterest that I wanted to share, in case you’re searching for a few new recipes to test out. First up: Baked Creamy Chicken Taquitos from Chef In Training. Even though I switched up a few of the ingredients (red salsa for the green salsa), they were still delicious! These will be making it on to next month’s menu plan for sure.

Another recipe that we’re in love with is this Roasted Chicken with Green Beans from Real Simple. Once again, I made a change of my own (I don’t add the lemon slices) and it is still as yummy as can be.
