Peanut Butter Cup Ice Cream Layer Cake

Confession: most of the recipes you see here are only created once. I like always coming up with something new, so it has to be something seriously awesome to make it at our home twice. The Husband celebrated his birthday this past Monday (the big 3-0!), and his request for his birthday cake was my Ice Cream Layer Cake with a few minor changes. It was so good that I had to share it!

Are you ready for some Peanut Butter Cup Ice Cream Layer Cake?!?

So this recipe still has the same base layer of ice cream sandwiches. I used the Walmart brand Peanut Butter Cup Ice Cream which has actual mini peanut butter cups, fudge swirls, and peanut butter swirls throughout for the ice cream layers and in addition to the chocolate chips, I added mini Reese’s Peanut Butter Cups. Catch that? More simply, create the cake in these layers:
