Broccoli Corn Casserole

This recipe for Broccoli Corn Casserole is a necessity for the Holidays in my family.

No joke.

My grandma makes a double batch at Thanksgiving and Christmas because she knows I’ll easily devour half; it’s that good. I’m thrilled to share my secret family recipe with you today, just in time for Thanksgiving!

Broccoli Corn Casserole

Cook time 30 minutes

  • 16oz frozen broccoli cuts
  • 1 can creamed corn
  • 2 eggs (beaten)
  • 1/4 cup butter (melted)
  • 10-12 Ritz crackers (crumbled)
  • 1 thin slice bread (toasted and crumbled)


Step 1 Cook broccoli and drain well.
Step 2 In a 9 in. x 9 in. baking dish, beat eggs. Add crumbled toast, 1/8 cup butter, cream corn, and broccoli to the baking dish and mix together.
Step 3 Combine the remaining butter and crumbled crackers in a separate dish. Spread over the top of the casserole.
Step 4 Bake for 30 minutes at 325 degrees. For double recipe, bake for 40 minutes.

Although this is by no means the healthiest recipe, I make sure to use reduced fat crackers, wheat toast, and margarine to help my cause a little. It doesn’t affect the taste at all.
