I have been craving all things savory and packed with protein lately, which has been a huge departure from my typical sweet tooth. It’s actually caught both me and The Husband off guard and I’ve been searching high and low for new recipes that satisfies baby’s demands. Recently, I’ve created a new favorite breakfast recipe using Simply Potatoes, a delicious breakfast scramble, that I just can’t get enough of that I’m thrilled to share today. Simply Potatoes are fresh potatoes that are refrigerated, but never frozen or dehydrated and made only with real ingredients. Yes — you read that right. No peeling or dicing required! I love that I can easily throw the potatoes into a skillet and get to cooking without all of the prep work. The faster I can feed the
beast baby, the better.
Let’s dig right in!
- 1 c. Simply Potatoes Diced Potatoes with Onion
- 2 eggs, scrambled
- 1 strip cooked bacon, crumbled
- 1/4 c. shredded cheese
- 1 tortilla
- salt & pepper, to taste
- In a skillet, brown the potatoes with a small dash of olive oil.
- Add the eggs and bacon to the potatoes and mix well.
- Place the mixture on the tortilla and sprinkle the cheese, salt, and pepper on top.
- Roll the tortilla up to create a burrito.
- Enjoy while warm!
