While I’m a chocolate loving girl at heart, sometimes warmer weather calls for a lighter treat that doesn’t feel so heavy. I’ve been making these Cran Apple Crumble Bars for years and now its time to share the secrets with you!
One of the best wedding gifts I received was from my Mother-In-Law: the Better Homes & Garden Cook Book. It is chock full of recipes that have saved my cooking duties and I’ve stumbled across a sweet treat or two as well. One of them being a version of these bars. I’ve tweaked the recipe a bit to suit my tastes and I hope you like them as much as I do!
- 1 c. flour
- 1 c. quick oats
- 1 c. brown sugar
- 1/4 tsp. baking soda
- 1/2 c. butter, softened
- 1 c. applesauce
- 2/3 c. dried cranerries
- 1/3 c. white chocolate chips
- 1/2 tsp. ground cinnamon
1. Combine the flour, oats, brown sugar, and baking soda in a large bowl. Cut in the butter with a pastry blender (or rubber spatula like I did) until it resembles coarse crumbles. Reserve 1 cup of the crumb mixture; press the remaining mix into the bottom of a greased 9 in. x 9 in. pan.
2. In a separate bowl, mix cranberries, applesauce, white chocolate chips, and cinnamon. Spoon on top of the pressed crumb mixture and spread evenly. Shake the reserved crumb mixture over the top. Bake at 350 degrees for 30 minutes.
