I have a confession: I despised cheesecake for the first 25 years of my life. There, I said it and I feel like a weght has lifted off my chest.
And landed on my thighs.
But seriously, I really didn’t like the stuff. It wasn’t until I was pregnant with Luke that I ever really ever had the temptation for the stuff and I haven’t looked back since.
The recipe I’m going to share with you today marries three of my favorite foodi things: Oreos, mint, and cheesecake. Prepare to fall in love!
Since beginning my love affair with cheesecake, I’ve found a great many recipes that are most typically super difficult and time consuming to complete (ahem, Martha). This recipe is not, I assure you.
Ingredients:
{2} 8 oz. packages cream cheese, softened
1/2 c. white sugar
1 tsp. vanilla extract
2 eggs
Mint Oreos
mint chips
Begin by placing cupcake liners in a muffin tin and adding a single Mint Oreo to each. Mix the cream cheese, sugar, and vanilla together. Add eggs and mix well. Scoop cheesecake mixture into each prepared cupcake liner until 3/4 full. Sprinkle the mint chips on top of the filled mini cheesecakes.
Bake for 25 minutes at 325 degrees. Chill to store.
Once they are placed in fancier cupcake liners and set upon a blinged-out cupcake stand (coming tomorrow!), they look simply fabulous and extremely tasty!
