Ice Cream Layer Cake

Summer time is in full swing here in Phoenix; but let’s be honest, it’s been this way since late March! Summer is the perfect time to come up with all kinds of chilled desserts and today’s recipe is no exception!

This Ice Cream Layer Cake is topped with a sweet dollop of COOL WHIP Whipped Topping and sprinkles. It makes for a delicious and refreshing dessert for any get-together!

There aren’t many ingredients to this cake and it’s super easy to create. No baking required!

Ice Cream Layer Cake
Serves 20
Prep time 30 minutes

Ingredients

  • 1 carton COOL WHIP
  • 12 Ice Cream Sandwiches
  • 1 carton Chocolate Chip Cookie Dough Ice Cream (softened)
  • 1 jar Magic Shell Toppingl
  • Chocolate Chips (to taste)

Note

This recipe is a perfect summer treat filled to the brim with ice cream, chocolate, and chocolate chips. For a different twist, you could substitute cookie dough chunks for the chocolate chips.

Directions

Step 1 Create a base layer for the cake with the ice cream sandwiches in a 13x9 pan. Press them in firmly. They should be snug.
Step 2 Scoop half of the ice cream on top of the ice cream sandwiches. Spread evenly.
Step 3 Apply a thin layer of Magic Shell and sprinkle chocolate chips to taste. {I always appreciate more chocolate chips rather than less, but you may be different.}
Step 4 Place pan in the freezer for appx 15 minutes, or until ice cream layer has hardened.
Step 5 Take the pan out of the freezer. Spread the remaining ice cream and add another layer of Magic Shell and chocolate chips.
Step 6 Freeze the Ice Cream Layer Cake until ready to serve. Add COOL WHIP and sprinkles to the cake before serving.
