Mint Oreo Chocolate Chip Cupcakes

I’ve recently come to the realization that I’m just not good at leaving well enough alone. Case in point, the standard cake mix. I just have a really hard time baking it as the package instructs me. Today’s recipe I’m sharing with you is no exception.

See, on Friday, I began the potty training process with my sweet Reagan and by this morning, Momma just wanted some chocolate. Like massive amounts of coping chocolate. And mint. And anything else remotely non-healthy I could throw in there.

So you can thank my sweet princess for the yumminess that is these Mint Oreo Chocolate Chip Cupcakes.

Mint Oreo Chocolate Chip Cupcakes

Mint Oreo Chocolate Chip Cupcakes are perfect for any occasion. With an Oreo base, chocolate chip filling, and moist chocolate frosting, these cupcakes are delicious and easy to make!

Ingredients

  • 1 box Chocolate Fudge Cake Mix (plus required ingredients on box)
  • handful Mint Chips
  • handful Chocolate Chips
  • 24 Oreos
  • 2 jars Chocolate Frosting

Directions

Cupcake Base
Step 1 Prepare box cake mix according to directions.
Step 2 Place cupcake liners in muffin tins. Add an Oreo to the bottom of each liner.
Step 3 Scoop enough cake batter into each liner so that it is 3/4 full.
Step 4 Sprinkle 8-10 chocolate chips on top of each cupcake before baking. Repeat with the mint chips.
Step 5 Bake the cupcakes at 350 degrees for 18 minutes. Allow cupcakes to cool fully.
Cupcake Frosting
Step 6 Using either a pastry bag and tip or a knife to spread, apply frosting to the top of each cupcake. Top with a few chocolate chips each.

Don’t the Oreos at the bottom of the cupcake look divine? They taste that good too. 🙂
