Peanut Butter Ice Cream Layer Cake

When it seems to be 500 degrees outside (thank you Phoenix summers), it’s really really hard to want to do anything that requires using my oven. Unfortunately, my family has a sweet tooth so I’m always trying to come up with new ways to create a dessert that is of the no-bake variety. I made something similar to this a few years back and thought I’d put a fun twist on it. This Peanut Butter Ice Cream Layer Cake was so easy to put together and my kids are already asking when I’m going to make it again!

Are you ready for some Peanut Butter Ice Cream Layer Cake?!?

Peanut Butter Ice Cream Layer Cake 1

Ingredients:

  • 12 ice cream sandwiches
  • 1 gallon Moose Tracks Ice Cream, or something similar
  • mini Reese’s Peanut Butter Cups
  • mini chocolate chips
  • Magic Shell

Directions:

Begin by creating a base layer of ice cream sandwiches. Press them firmly in a 13×9 pan, trying to fill in as much of the space as you can.

Create the cake in these layers:

  1. ice cream sandwiches
  2. half the carton of ice cream
  3. chocolate chips
  4. mini Reese’s Peanut Butter Cups
  5. Magic Shell
  6. other half of the ice cream
  7. chocolate chips
  8. Magic Shell
  9. mini Reese’s Peanut Butter Cups

To make the assembly quicker, you’ll want to make sure the ice cream is pretty soft so you can easily spread it out. Trust me on this one.

Refrigerate it after assembly for at least an hour so that the ice cream has a chance to firm back up.

    sounds like a delicious cavity waiting to happen!
    in other news: let the ice cream soften and instead of “spreading” it on the ice cream sandwiches, rip the box apart and “slice” the ice cream in 1-2″ widths and place it on the ice cream sandwiches. should work like a dream! (this is my trick for the ice cream desserts i make)!
