I’m a sucker for football and in all reality, so is the rest of my family. We’re die-hard Fantasy Football fans and I’m the one that insists on getting the special cable package each year so we don’t miss any of the games. My seven year old has had his own team for the past three years and he can list off the scores and stats of a good majority of the most popular players. Needless to say, the Big Game is an event for us. I’ve been testing new recipes to share for the big day and this one has been a big winner: Beer & Lime Slow Cooker Chicken Tacos.
There were two key components that made this recipe a success: Old El Paso™ Soft Tortilla Taco Boats and Bud Light® Lime. Have y’all seen these soft tortilla taco boats yet? Genius. And the lime twist to the beer adds just the right touch of flavor to send the shredded chicken into super awesome territory. My favorite part? I was able to easily find everything at my local Walmart.
Ingredients:
4 chicken breasts
16 oz. jar of salsa
3 oz. Bud Light® Lime
1/3 pkt. chicken taco seasoning
Old El Paso™ Soft Tortilla Taco Boats
sour cream
limes
olives
Directions:
1. Pour the jar of salsa in the slow cooker.
2. Place the chicken breasts on top of the salsa and top with the beer and the chicken taco seasoning.
3. Place slow cooker on high for 2-3 hours until chicken shreds easily.
4. Scoop shredded chicken into taco boats and top with whichever garnishes you like.
Add a squeeze of fresh lime across the top and enjoy! The alcohol cooks almost entirely out so its totally safe for everyone and it so delicious!
