Thin Mint® Brownies

Now that I have school age children of my own, I like to look back on my memories that I have of being their age. One of my fondest memories was being a Girl Scout® in my elementary years. Earning patches, making new friends, learning new skills, and selling cookies were the highlight of my years as a scout. I remember secretly stashing away sleeves of Thin Mints® in the back of our freezer so I could treasure those beloved treats far longer than the rest of my family. As a way to bring back a little slice of my childhood for my own kidlets, I made them Thin Mint® Brownies recently and they were an automatic hit!

As I was wandering through Walmart one night on a solo shopping trip (like a vacation, right?!), I happened across the Pillsbury™ Girl Scouts® Baking Mixes and I knew that my family would love this new twist on a classic favorite. And while I love doctoring any plain box mix, I didn’t need – or want – to change a thing to this.

When all was said and done, these bad boys tasted exactly like the real deal. The Husband couldn’t stop raving and the kids devoured them in a matter of minutes.

My favorite part of these brownies is that I simply had to follow the directions on the box. I’m not even kidding. I was able to include my six year old daughter during the pouring and the mixing of ingredients because there wasn’t anything outlandish that needed to be added. Additionally, Pillsbury™ Girl Scouts® Baking Mixes contain no colors, preservatives, or artificial flavors, so I’m totally okay with this special treat for my family.
